Rosie Lee Mansfield Spencer was born Thursday, April 13, 1939 to the late Joe and Daisy Lee Mansfield. Rosie "Boot" Mansfield was the fifth of twelve children born in Collinston, LA. Born a daughter of sharecroppers, she was always wise beyond her years. She learned to cook at the age of five and later became a master hair stylist, seamstress and cook, specializing in her famous pound cake and all kinds of southern comfort foods.
